Truffle salt should be a component of any salt-based dishes that you prepare as it can kill fungi that live within the soil that surrounds the truffle. If you have black truffles, however, you may wish to use black truffle salt as opposed to the regular white truffle salt.
Truffles are typically harvested when the plants are just starting to bloom. The truffles that are harvested are then sold at market value to various retailers. In order to increase their value, truffles are exposed to light, which encourages the growth of mold, which is a natural food source for the fungi that live inside the truffles.
